Terrasses du Larzac
Traditional cultivation, together with a gradual decrease in the use of herbicides and chemicals. The vines are pruned short, disbudded at the centre and the grapes harvested by hand.
Grenache, syrah and carignan express themselves to reveal the terroir of the Larzac foothills. This year, a touch of cinsault completes the blend.
Work is guided by our wish to respect the fruit and freshness offered to us by the terroir. The grapes are selected in the vineyard, the stalks removed and the grapes tanked for 15 to 20 days, under controlled temperatures.
The wine was matured in oak casks for the best part of 10 months. Bottling took place in October, followed by a well-earned rest of 2 months !
This late vintage confirms the greatness of the St Privat terroir. The quest for a well-balanced, soft and gentle wine is continued. Red fruits and spices are born along on delicate and velvety tannins, which make you want to come back to it.
Decanting and letting the wine breathe at a temperature of 15°C, will allow you to fully appreciate this wine.
